Putting your weight on the pegs instead of the seat changes the point at which your mass is applied to the frame of the bike. Try turning corners standing on the pegs as opposed to sitting on the seat and you will see the effect, especially in tight turns at high speeds. Putting your weight on the pegs also allows you to "counter-steer" (leaning the bike way over to the left and your body to the right) which allows you to do some turns you didn't think you could do. I learned how to use this technique to turn my HD 180 degrees in a space only 8 feet wide in an advanced riding course a few years ago. Gotta be careful not to spark the pegs, though.
